Bill Gates’ California-based startup, Savour, has created dairy-free butter using a combination of carbon dioxide, hydrogen, and oxygen chains.
Gates mentioned on his blog that this technology could significantly reduce our carbon footprint, as it doesn’t release greenhouse gases, uses no farmland, and requires much less water than traditional agriculture.
Gates claims it tastes like real butter because it is chemically similar. Savior’s butter has a carbon footprint of less than 0.8g CO2 equivalent per kg, compared to 16.9kg CO2 equivalent per kg for traditional butter.
However, the product won’t be commercially available until at least 2025, as the company is still working through regulatory approval and commercialization efforts.
